คุณค่าของผักพื้นบ้านสถานการณ์การใช้ประโยชน์ในปัจจุบันของชุมชนบ้านวังลุง ตำบลทอนหงส์ อำเภอพรหมคีรี จังหวัดนครศรีธรรมราช
Values of Local Vegetable and a Current Situation of Utilization at Ban Wanglung, Tonhong Sub-District, Phrom Khiri District, Nakhon Si Thammarat Province

Abstract
Abstract The purposes of this qualitative and quantitative research were: 1) to study the utilization and the economic value, nutrition value and social-culture value of local vegetables to community and 2) to study current situation from utilization of local vegetable. The research was done by using questionnaire, informal semi-structure interview, participating observation and focus group. The results of the research were found that 77 from 703 households still harvested and consumed local vegetables from the local harvest area. The utilization of local vegetables generated three different values which were (1) economic value of 77 household in term of saving expenditure estimated at 2,355,042.33 baht per year or 30,584.52 baht per household per year; (2) nutrition value of 16 species of local vegetables in term of ailment prevention for Ban Wanglung villagers; and (3) socialculture values which local vegetables played a part in influencing language, belief, tradition and ritual. Current utilization was less than that in the past owing to the change in economic growth and declaration of National Park in the area. The result of research could thus be used to create guidelines for conservation and sustainable management of local vegetables in the future.

บทคัดย่อ
การวิจัยนี้เป็นการศึกษาคุณค่าของผักพื้นบ้านโดยอาศัยการวิเคราะห์ข้อมูลทั้งเชิงปริมาณและเชิงคุณภาพ มีวัตถุประสงค์การวิจัยเพื่อ 1) ศึกษาลักษณะการใช้ประโยชน์ผักพื้นบ้านของชุมชนและคุณค่าของผักพื้นบ้านด้าน เศรษฐกิจ ด้านโภชนาการ และด้านสังคมวัฒนธรรมที่มีต่อชุมชน และ 2) ศึกษาสถานการณ์การใช้ประโยชน์ผักพื้น บ้านของชุมชนในปัจจุบัน ดำเนินการรวบรวมข้อมูลการใช้ประโยชน์ด้วยแบบสอบถาม แบบสัมภาษณ์กึ่งโครงสร้าง การสังเกตแบบมีส่วนร่วม และการสนทนากลุ่ม ผลการวิจัย มี 77 ครัวเรือนจาก 703 ครัวเรือนยังเก็บหาผักพื้นบ้าน ในแหล่งเก็บหา โดยนำมารับประทานสดและปรุงเป็นอาหาร การใช้ประโยชน์ผักพื้นบ้านก่อให้เกิดคุณค่าของผักพื้น บ้าน 3 ด้านคือ คุณค่าด้านเศรษฐกิจของ 77 ครัวเรือนที่ช่วยประหยัดรายจ่ายได้ปีละ 2,355,042.33 บาท คิดเป็น มูลค่าเฉลี่ยต่อครัวเรือนเท่ากับ 30,584.52 บาทต่อปี คุณค่าด้านโภชนาการของผักพื้นบ้าน 16 ชนิดช่วยบรรเทาอาการ จากโรคต่างๆ ของชาวบ้านได้ และพบวัฒนธรรมที่เกี่ยวข้องกับผักพื้นบ้านคือ วัฒนธรรมการบริโภคอาหารพื้นบ้าน วัฒนธรรมด้านภาษา และวัฒนธรรมด้านความเชื่อ ค่านิยม ประเพณีและพิธีกรรม สำหรับสถานการณ์การใช้ประโยชน์ ผักพื้นบ้านในปัจจุบันพบว่า มีการใช้ประโยชน์ลดลงจากการขยายตัวของระบบเศรษฐกิจ และการประกาศเขตอุทยาน แห่งชาติ ข้อมูลที่ได้จากการศึกษาครั้งนี้นำไปใช้ในการจัดหาแนวทางของการจัดการผักพื้นบ้านที่เหมาะสมต่อไป
