Factors Affecting Food Sanitation Performance following the Standards of Food Establishments for Food Shops in Muang District, Pattani Province

Abstract
The purposes of this research were to study the performance of food sanitation of food shops and to study the social psychology factors and the supporting factors, which affects on the performance of food sanitation. The samples of this research were 127 owners and executives of the food shops in Muang district, Pattani province by using the simple random sampling. Data was collected by questionnaires, knowledge test, attitude on food sanitation test, and assess standards test. The findings were as follows : 1) Food shops in Muang district, Pattani province were on the standards at 64.6 percent ; 75.5 percent were in the municipality and 56.8 percent were out of the municipality. 2) Social psychology and supporting factors were knowledge, attitude on food sanitation, being membership of food retailer club and having the suggestion of concerned organizations could be predicted the possible of being on the standard of food shops in Muang district, Pattani province at 48.2 percent (p <.001). 3) The most important obstacles to improve the shop following the standard were lacking of money (46.9 percent) and lacking of knowledge (26.5 percent).

บทคัดย่อ
การวิจัยครั้งนี้มีวัตถุประสงค์เพื่อศึกษาสภาวะการสุขาภิบาลอาหารของร้านอาหาร และศึกษาปัจจัยจิตวิทยา สังคมและปัจจัยสนับสนุนที่มีผลต่อสภาวะการสุขาภิบาลอาหารของร้านอาหาร กลุ่มตัวอย่างในการวิจัยเป็นเจ้าของหรือผู้บริหารกิจการร้านอาหารในอำเภอเมือง จังหวัดปัตตานี จำนวน 127 ร้าน สุ่มตัวอย่างโดยวิธีสุ่มอย่างง่าย รวบรวมข้อมูลโดยแบบสอบถาม แบบทดสอบความรู้ แบบวัดเจตคติต่องานสุขาภิบาลอาหาร และแบบประเมินมาตรฐานร้านอาหาร ผลการวิจัยพบว่า 1) สภาวะการสุขาภิบาลอาหารของร้านอาหารในอำเภอเมือง จังหวัดปัตตานี ได้มาตรฐานตามหลักเกณฑ์ข้อกำหนดฯ ร้อยละ 64.6 จำแนกเป็นร้านอาหารในเขตเทศบาล และนอกเขตเทศบาล ร้อยละ 75.5 และ 56.8 ตามลำดับ 2) ปัจจัยด้านจิตวิทยาสังคมและปัจจัยสนับสนุน ได้แก่ ความรู้ เจตคติต่อ การสุขาภิบาลอาหาร การเป็นสมาชิกชมรมผู้ประกอบการอาหาร และการมีหน่วยงานหรือองค์กรที่เกี่ยวข้องให้ คำแนะนำ มีผลต่อการได้มาตรฐานของร้านอาหารเขตอำเภอเมือง จังหวัดปัตตานี อย่างมีนัยสำคัญทางสถิติ (p < .001) โดยปัจจัยทั้งหมดสามารถทำนายความน่าจะเป็นของการได้มาตรฐานสำหรับร้านอาหารในเขตจังหวัดปัตตานี ได้ร้อยละ 48.2 3) ปัญหาอุปสรรคในการปรับปรุงร้านตามหลักเกณฑ์ข้อกำหนดพบว่า ส่วนใหญ่เป็นปัญหาด้านการเงิน (ร้อยละ 46.9) รองลงมาคือ ขาดความรู้ (ร้อยละ 26.5)
